Southerwestern mac and cheese
you will need
1 box of macoroni (cooked per directions on box)
2-3 Tablespoons of sour cream
2-3 bags of sheddared cheese ( i mix the bags up one sharp 2 cobly jack)
1 can of chopped green chilies ( if u have access to fresh green chilie 1 cup should do it)
1/2 cup milk
1/2 cup butter
3-4 table spoons of flour.
5-6 dashes of hot sauce ( this part depends on hot ya like ya food)
salt and pepper to tastes.
while pasta is boiling in another sauce pan melt butter on low heat. once melted sprinkle in flour constantly stiring until a nice rue has formed ( mixed well adn thickening) slow add milk and stir till well mixed ( again ur looking for the rue to thicken here) slowly add cheese ( i do half bag at a time) stir til melted continue this til all cheese is added, add green chilies give it a few more stirs. remove from heat. add sour cream salt and pepper and hot sauce.
once the pasta has finished cooking drain, return to cooking pot ( here i add alittle butter to coat pasta ) add cheese mix stir til all pasta is coated. now here u can do a few different things.. scoop out and enjoy as is or.....
For homebake style : place mac and cheese in a dish sprinkle bread crumbs along the top bake for about 20-25 min at 400 degrees
add cut up ham or chicken or tuna some veggies and make a cheesey bake cassorole ( drain all veggies well mix all together) and bake for about 20-25 min at 400 degrees
instead of adding sour cream add ranch dressing or caesar salad dressing.
For those who are allergic to milk or milk products.. do the following (yep hotlips this for taz) sub silk milk for the reg milk ( or lactose free milk products) do the same wif the cheese theres a few good products out there for milk and cheese that are lacotose free jsut use them.. obmit the sour cream and use mayo. instead of butter use shortening. ( will still be able to make a rue) and now taz can have some too if u cant find cheese producted made wif the silk milk sub.. then use cheese wiz or velveta.. both are a fake cheese so taz shouldnt have a problem.
